It's a "game" created for Australia's TV1. You can continue into their main site and see that they actually have some pretty cool Knight Rider stuff inside.

Including the "This is a game of skill, designed not only to challenge one's hand-eye coordination, but to stimulate strategic thinking as well" bit? I remember an episode where Michael was playing PAC-MAN where he may have said it. Maybe Soul Survivor?

Nope. I think it's the episode where at the start Michael broke into a video game company as FLAG was hired to test their security. Apparently someone was steeling their plans for their games (turned out at the end they were up to no good and hired FLAG as a cover and got caught!) But when Michael was in the semi and Bonnie was testing the company's video games she programmed into KITT, she was going to stop playing as she was worried it was playing during work time. That's when KITT said the line and she went like "Ok, one more."
