Since the new KR pilot has been relatively well received, and that NBC are now
offering it up to non-US TV companies for international viewers, what would
be the chance that NBC might also eventually release it on DVD?
And if there is an official DVD release anytime soon, what would you like to
see included as extras alongside the main feature? Cast interviews, deleted
scenes, out-takes, behind the scenes docs, interactive games . . . ?

I think the chances of it being offered on DVD are pretty high. I don't think it costs all that much money to make a DVD, especially compared to the cost of making a pilot in the first place, and DVD's are where a lot of movies make all of their money. Of course, I'm not related to the movie industry in any way, so I don't actually know for sure...
I think that cast interviews and "making of" videos are always the most interesting extras on a DVD. Things like games usually take a lot of effort to make and a lot of room on the DVD, but never hold anyone's interest for long. Deleted scenes and outtakes are interesting, but I don't think they're that great taken out of context. Plus, a lot of outtakes are usually only funny for people that were there.

I'd prefer a Blu-ray release to be honest. Since it was made in HD.

It'd be best if released in both formats. It may have been made in HD, but most
people like myself still have standard DVD players, and haven't any HD gear yet.
Isn't Universal one of the few studios that hasn't fully committed to Blu-Ray yet?

All the studios are on board with Blu-ray now. It's still a small market though, so as you say it would make more sense to release on both DVD and Blu-ray.
