The many buttons just make KITT look way cooler than if the interior was buttonless...
As to why Michael presses so many of them... I guess he just wants to show off in front of them hot wimmens...

Remember Team Knight Rider?
Now, there's an example of a keyless interior. How boring. Even some modern vehicles have similar screen interfaces as those Fords.

The buttons could also serve as backup. If the computer system fails, the car could still be operated, others might just be there for driver confirmation so that a computer malfunction could not cause major damage or kill somebody. Then there is the option to use them for coding, redundancy...etc KITT also might have de-centralized controls due to the constant development. Last but not least, they look cool
