I think that K.I.T.T's way to talk is the best feature.

Talking. I mean Bond has a car of sorts that can do most of what KITT can do, but you can't beat a car that has an indepth knowledged of literature and can debate philosophy whilst calculating the chemical composition of whatever you happen to be scanning.

I think if KITT couldn't talk and think, there'd be no Knight Rider, period!

You had the right idea but it is to hard to pick just one, I am going to start a post with a couple of choices for each one...

I prefer the Auto Cruise feature as the features of K.I.T.T. Auto Cruise is very useful for example in the long driving trips. If the pilot feels tired he/she can switch to the Auto Cruise mode and have some sleep same time as the K.I.T.T drives itself. There“s no need to stop and sleep in the motels when you have a mode like Auto Cruise in your car.

KITT's whole reason for being is due to being able to talk and run without a driver. That is the purpose of this car being made. He can understand what the driver wants and get somewhere when the driver is nowhere near.
