What involvement did George Barris have with Knight Rider?

As far as I know, he just developed the Super Pursuit Mode and the Emergency Braking System. He might have developed KITT's Convertible Mode, but I'm not sure.

He did do convertible mode too, Otherwise he had very little to do with the series.
